This boneless cut is excellent roasted or slowly braised. Very often it is larded with mangalitza before roasting in order to get the finest taste. Before roasting it can be rubbed with coriander, rosemary, black pepper, lemon juice and a pinch of salt. Haunch roast is excellent served with roasted vegetables, or sautéed mushrooms.
