Red Deer Slices à la Harghita

Ingredients for 6 personsRed Deer Slices a la Harghita

  • 1,5 kg red deer hounch
  • coriander, thyme, rosemary
  • oil
  • 20 dkg chicken liver
  • marjoram, sage
  • 20 dkg smoked bacon
  • 2-3 red onions
  • salt and pepper
  • 20 dkg mushrooms
  • 2 dl red wine
  • 15-20 dkg green peas, white beans

 

Preparation method:

  • Cut the red deer haunch into stripes, then put it into a dish, sprinkle it with coriander, rosemary and thyme. Pour on it as much oil as it  is enough to completely cover it. Let it stand for 1-2 days in a cool place.
  • Slice the liver, add marjoram and sage according to taste, then put it in the refrigerator.
  • In a pot  fry the chopped bacon and onion  until they are brown and then add the meat to it. Season it with salt and pepper. After some time add the liver and mushrooms. In the meantime, pour the wine in the pot.  
  • When the meat is almost done add the peas and beans as well. When everything is fully cooked serve it with bread, potatoes or rice according to taste.
